Add the Broth

For those who prefer a super creamy, almost chowder-like texture, you can add a thickener to the pot. Simply mix 2 tbsp of cornstarch with a few tablespoons of cold water until smooth. Pour the cornstarch mixture into the bubbling pot along with the heavy cream. This will give the soup a thicker consistency within 10-15 minutes.

Ingredients
- 2 lbs Russet potatoes peeled & diced
- 1.5 lbs ham diced
- 1 medium yellow onion diced
- 2 ribs celery chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 1 tsp fresh thyme minced
- 1 tsp black pepper freshly cracked
Instructions
- Peel and dice the potatoes, onion and celery. Then, dice the ham into large chunks.
- Place the vegetables, diced ham, fresh thyme, and pepper into a 6-quart slow cooker.
- Pour the chicken broth over the top. Cover & cook on low for 6-8 hours.
- Once the potatoes are completely soft, mash approximately 1/3 of the soup with a potato masher.
- Stir in the heavy cream & allow the soup to continue cooking for an additional 15 minutes.
