- Great for meal prep: The leftovers make incredibly delicious sandwiches the next day.

What You Need
This recipe requires very few ingredients, all of which should be in your pantry, to make a delicious dinner. Limiting the amount of ingredients allows you to really focus on the flavor of the beef.
- Beef sirloin tip roast: A boneless roast that weighs between 2.5 and 3 pounds. It should have a nice lean appearance, but still have some fat to keep the meat moist.
- Beef broth: Low sodium beef broth, so you can regulate how salty the gravy becomes.
- Aromatics: Onion and garlic are diced yellow onion and fresh garlic cloves that will add a savory layer of flavor to the bottom of the roasting pan.
- Worcestershire sauce: A little bit of Worcestershire sauce that will add lots of flavor to the dish.
- Dried herbs: Dried thyme and rosemary will give the meat a delicious, earthy smell.
- Cornstarch: Although not required, will help thicken the leftover juices so you have some gravy!

How To Make It
Here’s how to put this delicious comfort food dish together.
Brown the Beef
Start by patting the beef dry with paper towels and then season the top of the roast with salt, pepper, thyme, and rosemary. Heat a few tablespoons of oil in a large skillet and add the beef. Sear the meat for 2 to 3 minutes per side until nicely browned.

Layer the Slow Cooker
Lay your sliced onions and crushed garlic at the base of the slow cooker for a fragrant bed. Place your seared, browned roast directly on top of the onions and garlic.
Add Liquids and Cook
Next, pour your beef broth and Worcestershire sauce over and around the meat in the slow cooker.

Slowly cook covered on low for 6-8 hours until the meat is fork-tender.

Rest and Make Gravy
Transfer the roast to a cutting board and let it rest for 10-15 minutes. Heat the liquid in a saucepan and stir in a cornstarch/water mixture until thickened into gravy.

Tips
- Don’t skip the step of searing the roast first, the browned bits will add a lot of flavor to the gravy.
- Always cut against the grain and slice very thin for maximum tenderness.
- Don’t thicken the gravy until ready to serve to avoid lumps.
- If the roast isn’t fork tender after 6 hours, cook an additional 30-60 minutes on low heat.
- Add large chunks of carrots and whole baby potatoes to the slow cooker along with the roast.
How to Store
- Store: Store leftover beef and gravy in an airtight container in the fridge for up to 4 days.
- Freeze: Place beef slices in gravy in a freezer-safe, heavy duty container and freeze for up to 3 months.
- Reheat: Warm beef on the stove in a saucepan over medium-low heat, covering with gravy to prevent drying out.
How to Serve
- Top a large bowl of garlic mashed potatoes with the sliced beef.
- Serve alongside buttery egg noodles to enjoy all of the rich gravy.
- Enjoy with simple roasted red potatoes and steamed green beans.
- Use leftover cold slices to make a sandwich on crusty bread with provolone cheese.
