Ingredients

  • 1 medium head green cabbage chopped into chunks
  • 1.5 lbs baby yellow or russet potatoes cut into bite-sized pieces
  • 1 cup low sodium chicken broth
  • Salt & black pepper to taste optional

Instructions

  • Chop the cabbage into large wedges and chop the potatoes into evenly sized pieces.
  • Place the potato slices at the bottom of the slow cooker.
  • Pour the chicken broth over the top layer of cabbage. Add generous amounts of salt & black pepper to taste.
  • Cover the slow cooker. Set to LOW for 6-7 hours. Check after 6 hours to see if the potatoes & cabbage are fork tender. If still not done, close the lid again and continue cooking until tender.
  • Gently stir the mixture together until all veggies are coated in the savory juices before serving.
